there is a lot going on in this question and I do not understand how to really answer Cannot Be True questions without a really clear logic chain diagram

Great question. You can think of cannot be true questions as "must be false" questions. For this particular question, I would highly recommend diagramming the stimulus.
The more you diagram, the easier it'll be for you to see what must be false. If you're still having trouble seeing what must be false without diagramming, then don't be scared to diagram, as it'll almost certainly help.
Profitably sell - >discount (no discount - >not profitably sell) no high volume - >no discount (discount - >high volume) high volume - >cater to mass tastes or specialized market access (don't cater to mass tastes and no specialized market access - >not high volume)
In using both the original statements and the contrapositives, we see that we can make a chain starting with profitably sell
Profitably sell - >discount - >high volume - >cater to mass tastes or specialized market access
The correct answer choice will almost certainly come somewhere from this chain.
(C) says, "A bookstore that profitably sells books at below-market prices gets discounts from publishers."
This is given to us in the first statement of the stimulus, so it must be true. Thus, (C) is the correct answer choice.
