I am having a bit of trouble understanding the reason for why B is correct, would someone be able to help clarify this for me please

Happy to help. Let's take a look at (B).

(B) says, "It is accurate to say that 5,000 lives have been saved as
long as 5,000 people who would have died in a given year as a result
of not changing their diet, did not do so even if they died for some
other reason."

(B) helps to clear things up and make Leona's argument stronger. It's
possible that the people could be saved from death by egg consumption
but still die in the 10-year period from another type of ailment or
cause.
