Do all sufficient and Necessary questions give you a premise and conclusion like the example in the video lesson?

I get the rules of the S&N questions, but Im having a hard time answering the actual lsat questions. Im having a hard time relating the conditions with the answer choices.

How you do know you have to write out the s&n for the questions? Is it only the rules? So if All isnt there, or words like that you dont need to use it? Im a little confused on when to write it out.
