Okay nevermind I figured out why (B) won't work.
Because even though you put 3rd floor on Thursday,
possibility (1) you can put 2 on Friday and 8 on Saturday and fill in the rest
possibility (2) you put 2 on Wednesday and 8 on saturday and fill in the rest
Took me awhile to figure it out but i hope it helps! :)

If 3 is on Thursday (B), and 3-7-5 are on different days in that order, and 4 cannot be with 3 based on rule 1, that means Friday would be 4 & 7, so how can 2 be put on Friday? How is that a possibility? Why can't "B" be the answer?

Hi, 2 can't be on Friday. I set this up as multi linear and we know that 4/8 are auto-placed

This means there are only two places we could put the 8, with the 3 or with them5. However since both can yield valid scenarios, this is not fully determined.
