The author, if I'm not mistaken, spends most of the first paragraph stating how previous theories can be proven wrong, and spends the rest of the passage giving examples. You are correct that the author does spend the majority of the first paragraph highlighting why previous scientific assumptions and theories are incorrect. However, at the end of the first paragraph, the author proposes a hypothesis: "selection for efficiency, we suggest, led to an inability to survive on raw-food diets in the wild" (lines 25 to 27)
The remainder of the passage is spent exploring what limits humans' abilities to use raw food.
