how is the author overtly critical. He is obviously critical of the scientist, but I did not get that he was overtly. Please explain, thank you!

I think you may be raising a distinction without a difference. Overtly in this context just means that the author explicitly thinks those scientists are wrong. And since the author posts that there are other active ingredients in wine, they must explicitly and overtly disagree with the scientists who think it's only alcohol.
